Two years ago my son was diagnosed with multiple food allergies. I was completely devastated! I had never dealt with anything like this before. Why was it happening? Why didn't it happen to the other children? What do I do now? These were the questions going round and round in my head. I have culinary background but not nearly enough to deal with this. I felt sad, overwhelmed, scared and mad all at the same time. I couldn't focus on much except making sure my son didn't get anything that would hurt him.
He couldn't have much...he was allergic to eggs, soy, dairy, wheat. corn, peanuts and tree-nuts. What else is there? On top of that, he had environmental allergies.... all tree and grass. He was so young to have his quality life effected in this way. I started researching food, recipes, and any information I could get my hands on. I went to several health food stores and looked at item after item to find something that he could eat. Let me just stop for a moment, if you hate regular grocery shopping this will wear you out!! Back to the story, I was exhausted to say the least and still hadn't gotten very far. Is it that hard to find nutritional allergy free items? Absolutely!
What is the world coming to when a mother cannot nourish her child? This was depressing! My heavenly Father spoke to me when I had come to the end of my rope and said to me "Get up! this is a time of learning!" He was right. If I couldn't find it, I would have to learn to make it. So I went out and found every book I could get my hands on that dealt with allergy free cooking and baking.
OMG! How expensive the ingredients are! Eating healthy is expensive, there has to be a way to fix that.
